Cooking with Coronation Street: Julie's Mum's Chocolate Cake

julieH.jpgMost of our recipes have so far been extracted from a Sunday supplement that was printed in the 1990s, donated by one of our regular readers, Katie. Today's recipe was discovered by our editor, R'Sue and was donated to the Epilepsy Action National Tea Break. National Tea Break day in support of this cause is going to be held October 17, 2008. This recipe was donated by Julie Hesmondhalgh and is her mum's "unbeatable chocolate cake". Well you can't really argue with chocolate cake, can you? Julie is a great supporter of a good many charities, bless her. Her alter-ego, Hayley Cropper, is on a leave of absence from Coronation Street but maybe on her return, we'll see her serving cake for the factory tea break! Click through the link for the recipe!

Julie's Mum's Chocolate Cake

Cake:

4oz margarine
6oz sugar
6oz self-raising flour
2oz drinking chocolate
2 eggs, beaten
2 egg-cupfuls boiling milk
1 egg-cupful boiling water

Filling:

2oz butter
2oz drinking chocolate
4oz icing sugar
1 dessertspoon of sherry
1 dessertspoon of black coffee


For cake ingredients, cream margarine and sugar together. Add beaten eggs. Fold in flour and drinking chocolate. Finally add boiling water and milk.

Bake in an 8 inch cake tin (it doesn't say, but you probably might want to grease and flour the pan as most cake recipes call for that). Bake one hour in centre of the oven at 180 degrees celcius. (350 F.)

For filling, combine all ingredients. Cut the cake in half when cooled and spread the filling. Put cake back together and top with 10 pieces of melted chocolate.

What - Hayley and chocolate cake together in a post and no mention of her Corrie favourite, the chocolate lumpeh-bumpeh cake? It's got to be good with a name like that.
