Today we bring you another recipe from Betty Turpin Williams' cookery book. It's a hearty beef casserole, sure to warm your innards on a frosty February day! Betty usually does good basic dishes, both traditional and filling, dishes that can be stretched with the addition of a few more veg and a pint of water. After all, she's been cooking for crowds in the pub for almost 40 years! She ought to know what she's doing at her age! I hesitate to think what will become of the Rovers' menu when she finally retires.

1 lb chuck steak, cubed
Oil for frying
1 large onion, chopped
2 carrots, chopped
1 turnip, chopped
Half a swede, chopped
1 oz plain flour
1 pint hot water
Salt and pepper
1 bay leaf
1 tsp dried thyme
Dumplings:
4 oz self-raising flour
2 oz shredded suet
Salt and pepper
Preheat the oven to 300F. Brown the meat oil in a big pan. Put meat in
a flame proof casserole. Fry onion and vegetables quickly and add to
casserole. Stir flour into remaining oil in pan, adding more oil if
needed. Stir as flour browns. Gradually add hot water. Keep
stirring. Season with salt, pepper, bay leaf, thyme. Pour liquid over
meat and vegetables. Cover and bake for 2 hours. Meanwhile, make
dumplings: sift flour into a basin and mix in suet, salt and pepper.
Add enough cold water to make dough. Divide into 12 balls. Take
casserole out of oven. Place balls on top of liquid, replace lid and
simmer on top of cooker for 25 minutes.

ok, what's a "swede" let alone "half a swede"????
always thought that a 'swede' was the english word for what we in canada call a rutabaga...that is the large-ish, yellow-ish, purple-y topped waxed vegs...
Yes, a swede is a rutabaga.
You can substitute a turnip or a rutabaga for a Swede, yes.

Tvor, can you confirm that this is Sally's authentic fish finger recipe? I'm sure hers involves a liberal application of ketchup and a side order of oven chips. And for authenticity, is it best to stick to Freshco's own label fish fingers?

Would anybody know where in the UK I can buy the casserole dishes used in The Rovers Return ? I used to have some like thewm but over the years they have been "borrowed"or broken.I have tried and tried with no luck so far.
