Cooking with Coronation Street: Coconut pudding

Today's recipe comes from Jim's cafe as owned and run by Alma and Gail and may take you back in your memories right into your gran's kitchen. I like a good pudding, me, and it always sets nicer with a cold glass of milk or a nice cup of tea (but then, everything goes well with a nice cuppa!) It's easy to make and easy to eat! Give it a try!

Coconut Pudding
(To Serve 4)

2 oz margarine
8 oz white sugar
4 eggs
4 oz self-raising flour, sieved
1/2 tsp baking powder
Pinch of salt
1 pint milk
8 oz desiccated coconut
1 tsp vanilla extract

Preheat the oven to 350 F. Soften the margarine in a bowl and gradually mix in the rest of the ingredients, one at a time, in the order given above. Make sure you stir well after every addition. When everything is thoroughly blended, pout into a 10 inch buttered pudding dish. Pop in the preheated oven and bake for 1 hour until risen and golden

I am Canadian and have always wondered why what would seem like 'cake' to me (floury, baked concoction)is called 'pudding' in Britain. Does anyone have any explanation.

A cake is something eaten cold on its own. A pudding is (usually) warm and covered in custard. MMMMM, scrumptious!! I think coconut pudding could be classed as either.

I think it goes back to the idea of christmas "pudding" which is a steamed heavy fruitcake but served warm with sauce. To us, "pudding" is like very thick custard sort of but then again, we also have bread pudding which is not cake nor our style of pudding.

This sounds ummie! Love coconut, will give it a try. 4 eggs should make it a spong.
