Cooking with Coronation Street: Deirdre's pea soup

deirdre_89.jpgYou don't usually think of Deirdre as a dab hand in the kitchen. Indeed, Blanche is always criticizing her efforts but then again, Blanche criticizes everyone! There's nothing better on a cold winter day than a bowl of hot soup and here's a recipe that's great. As me dad would say, it'll put hair on your chest!

Pea Soup
(To Serve 6)

1 bacon shank or ham bone
8 oz split peas
8 oz carrots, chopped
4 oz swede (turnip or rutabaga), chopped
1 large onion, chopped
Good pinch of mixed herbs

Bring the bacon shank or ham bone to the boil in 3 pints of water. Spoon off the foam as it rises to the top. Add the split peas, the chopped vegetables and a good pinch of mixed herbs. Simmer for 1 1/2 hours stirring occasionally. Take the bacon shank out of the pan and remove the meat from the bone. Return the meat to the pan. Taste the soup and add seasoning if you think it needs it.

hmm...can' recall ever seeing anything more than the stove (with that copper heart on the wall above it) in the Barlow's pantry...nope, can't even imagine deirdre stirring a pan of homemade soup for hours; she'd rather be in the pub!
