Cooking with Coronation Street: Curly’s Chicken Curry

Curly91Slickhair.jpgThis week we bring you something a bit spicier from Curly Watts. Curly used to work for Bettabuys supermarket with Reg Holdsworth and later for Freschos. I always thought Curly would be a dab hand in the kitchen and it seems I was right.

Curly reckons: "Even though it means working for Reg, I must admit that there are advantages to being employed by Bettabuys. All the world is there. Whatever I need in the way of ingredients is always readily available. Unless, of course, we've sold out and I've forgotten to reorder. But I've always been a bit adventurous in my cooking."

Chicken Curry
(To Serve 2)

1 red chilli pepper, deseeded
1 onion
1 carrot, peeled and chopped
1 clove garlic, chopped
2 tsp curry powder
1/2 tsp turmeric
4 chicken thighs
Salt and pepper
3/4 pint chicken stock (about a cup and a half)
1 oz desiccated coconut

Chop the chilli pepper finely (be careful, you might want to get some thin latex gloves to protect your skin and don’t rub your eyes!) as well as the onion, and fry them gently in a little oil. Add the peeled and chopped carrot. Add the chopped garlic, the curry powder and the turmeric. Roughly chop the chicken and season with salt and pepper. Add the chicken to the pan and stir it round, coating it with the spiced oil. Add the chicken stock and coconut. Bring to the boil and simmer gently for 25-30 minutes. Serve with boiled rice and mango chutney.
